One of my favorite things to do is make homemade nut butter.  The process is simple, I can add in different flavorings, and the finished product seems as if it may have taken a lot of technique.

Typically, when I make nut butters, the only ingredient is the nut itself and maybe a little touch of salt.  This results in a delicious nut butter that is a little bit thicker and definitely not as smooth as the Jif peanut butter you can purchase at the store.  I LOVE the stuff, but Brian still likes the smoothness of the store-bought stuff.

I had some extra peanuts and white chocolate chips on hand, and I had a hankering for Peanut Butter & Co’s White Chocolate Wonderful.  Instantly, I thought to make my own version of White Chocolate Wonderful…and it was, well…wonderful!


Because of Brian’s need for extra smooth peanut butter, I thought to experiment by adding a little coconut oil to the mix and it did the trick!  The end result was extremely delicious, addicting, smooth white chocolate peanut butter. YUM!

White Chocolate Peanut Butter

Ingredients:

  • 2 cups roasted and lightly salted peanuts
  • 1 cup of melted white chocolate chips
  • 1 tsp coconut oil

Directions:

In a food processor, or very powerful blender, grind the peanuts until the oils are released and you have something that looks like peanut butter.  Next, add in the melted chocolate chips and blend everything together for about 30-45 more seconds.  Finally, add in the coconut oil (it can be solid or liquid, as things heat up while they are blending in the food processor) and blend for another  30-45 seconds.

While I love eating it in my morning oats, in smoothies, and with fruit…I think my favorite way to eat the stuff is plain, straight off the spoon (or finger!) 😉
