Last night’s dinner was oh so tasty!

A friend of mine recommended that I try out a recipe for quinoa cakes a couple of weeks ago.  I glanced at the recipe, and from that moment I was set.  I had to make some quinoa cakes.  I remembered seeing quinoa, parmesan cheese, onions, and eggs in the ingredient list and decided to get a little creative by experimenting and creating my own version.  Unfortunately, I don’t remember the original website that had the quinoa cakes recipe…but fortunately, mine turned out pretty good and I am going to share my recipe with you!


Parmesan Quinoa Cakes

Yields:  10 patties

Ingredients:

  • 2 1/3 cups cooked quinoa
  • 1/3 cup shredded parmesan cheese
  • 1 tsp minced garlic
  • 1/4 cup whole wheat flour
  • 1/4 cup chopped onion
  • 2 eggs
  • 2 tsp garlic salt
  • 1 tsp Italian seasoning

Directions:

Begin by placing a skillet on the stove and heating to medium high heat with a small amount of nonstick cooking spray in the pan.

Next, combine all of the ingredients in a large bowl.  Mix together thoroughly.

Once thoroughly combined, form the mixture into 10 patties that are all about the same size.  Place the patties on the heated skillet and cook for 2 minutes on each side.

Serve plain with roasted veggies, place on top of a bed of greens, or dip in your favorite sauce.  Enjoy!
