Because the weekend was full of holiday fun and food, I did not fit grocery shopping into the weekend agenda.  I thought this would be a good way to clean out the fridge and get a little creative with the foods that we had on hand from last week.

Literally, the entire day I was racking my brain as to what we could eat for dinner.  I knew we had salmon in the freezer, and some cauliflower but I didn’t know how I wanted to prepare the fish and veggies.  My go-to week night meal is baked fish and roasted veggies.  While I do love that as a staple meal, I wanted to switch things up a bit.

I finally remembered that I purchased this Tasty Bite Tikka Masala cooking sauce at Earth Fare a couple of weeks ago and had yet to try it.

I am typically not one to purchase a lot of pre-made sauces because of all the crazy ingredients in them that I cannot pronounce, but this sauce was different.

The simple ingredient list held true to the Earth Fare food philosophy of no high fructose corn syrup, no artificial fats or trans fats, no artificial colors, no artificial flavors, no artificial sweeteners, no artificial preservatives, no bleached or bromated flour, no antibiotics or synthetic growth hormones in the fresh meat or dairy.

The ingredients were:  tomatoes, onions, cream, green pepper, sunflower oil, chickpea paste, sugar, cilantro, ginger, garlic salt, chilies, coriander, cumin, tumeric, spices. 

I cooked the salmon in this sauce by first placing the salmon in a warm, greased pan and cooking for about 2 minutes.  I then flipped the salmon and added the sauce on top to allow the fish to cook the rest of the way through.  I also added a handful of spinach to wilt down into the Tikka Masala sauce.

While this was cooking, I roasted some cauliflower and onions in the oven at 400 degrees for about 20 minutes.

The end result was perfect!  The fish and and veggie flavors melded perfectly with the Tikka Masala.  This was a quick, simple meal that was full of flavor and left Brian wanting more 😉
