Good morning!

I hope that everyone had a great end to the weekend.  I sure did!  After a day of running and getting things ready for the week ahead (as usual), I tried something new to me:

I had never tried acorn squash, but I love  seasonal foods and other winter squashes.  Also, I keep seeing delicious recipes that involve the acorn squash, so I thought I would give it a shot. At first, I wasn’t quite sure to do with it, then I realized that the squash came with directions!

Because I was running short on time, I decided to go with the speed method.  It was so quick, the squash was very tender and tasted delicious!

I started by cutting the squash in half.

I then scooped the seeds out with a spoon.

 

 

 

I then put 1/2 tsp of coconut oil into each half of the squash.  On my half I put salt and pepper, and on Brian’s half I put 1 Tbsp brown sugar and some cinnamon.  I then microwaved the halves on high for 6 minutes, just like the little sticker suggested. Both halves were extremely delicious!  I am definitely going to be purchasing this fall vegetable again.

I started Tina Reale’s Best Body Bootcamp!

I am really looking forward to this 8 week program.  It is always nice to do a program created by someone else because I learn so many things about how different people format things and I get great ideas for future workouts.  Also, it’s nice to not have to think about what my workout will be every day. I have already learned some new exercises, and was challenged to complete all the reps with great form…and it’s only the first day!

This is the third round for the bootcamp, and I am already so happy that I finally jumped on the bandwagon.  I will keep you posted on my bootcamp endeavors. Each week we must set goals for ourselves and complete different physical challenges.

The tough challenge today?  Plank intervals….for over 4 minutes! Insane…but I like it 😉

  2. Squash is one of my favorite veggies to eat! There are so many different kinds. If you have a little more time, I love to stuff my acorn squash and roast it in the oven. It’s a whole meal in one dish!

    I’ll be completing the first workout tonight, and I am dreading the scorpion!! Great job today!

    • Oh I totally agree! I love summer squash, winter squash, and all squash! I will for sure have to try stuffing it next time. What do you put in yours? Good luck with the scorpion!

  3. Ah, I’ve been afraid to buy acorn squash because of the hassle that I thought came along w/ them. But you have me convinced that’s rather easy… and it looks delicious!

    • I completely felt the same way. I thought that squash was hard to cut, took a long time to cook, and just wasn’t worth the work…I was wrong. It is so simple and totally worth the work.
